This Vegan bowl is made of rich and fresh roasted veggies. I love to use eggplant and parsnip. Therefore I use a grill that grills both sides at the same time. I combined the bowl with quinoa, fresh eggplant hummus, cucumber, avocado, arugula and topped it with some mustard seeds.

Recipe for the hummus:
1 small grilled/roasted eggplant
80 grams of chickpeas
1 spoon brown tahin
1 toe of fresh Garlic
1/2 fresh squeezed lemon
1 spoon linesead oil
Black Peper and Himalaya salt
Roasted Bellpeper herbs (I use the ones from the Turkish supermarket because they are extra spicy!)
Quinoa:
100 grams Mixed Quinoa (cooked in water untill the water absorbs)
fresh coriander and parsley
Curry powder
Veganaise / Vegan mayo
Agave sirup or Honey if you are Vega.
Black peper and Himalaya sea salt.
